kale salad | recipe


Lets talk about salad for a minute.

Actually, forget about the talking. Here are pictures + a recipe.



1 BUNCH OF KALE | Washed, de-stemmed and torn into pieces that can easily be shoved into your mouth. 
1 LARGE LEMON | Juiced + zested. 
1/4 CUP OLIVE OIL | Best if fresh from your own olive fields but y'know.
1 TBSP HONEY | Amount varies according to taste
1/2  CUP PARMESAN CHEESE | Shredded. As if there were any other way.
1/2 CUP WALNUTS | Toasted
1 CUP DRIED CRANBERRIES | Raisins also tend to do the trick. Kind of.

Combine honey, olive oil, lemon juice + zest as your dressing. I use a fork for the mixing because it makes me feel oh-so-fancy.

Pour over kale + distribute evenly-- unless you want to hog the good stuff all to yourself. In which case, drizzle accordingly

Add remainder of the toppings, being careful not to let all the munchies fall to the bottom.

And taadaa!! Enjoy.

    1. Hahahaha!! Confession: I let them fall to the bottom & then let everyone serve themselves first so that by the time I come around to the salad.... it's just cranberries, walnuts & cheese drizzled with lemon juice....allllll for me.... MmMmmmmm.. thats my kind of salad. ;)

  2. this salad is seriously one of the best things i have ever eaten. so addicting. (and the cranberries are totally the best part...)
